本论文系统综述了D-阿洛酮糖作为功能性糖替代品的代谢特性与应用前景。作为一种天然低热量甜味剂,阿洛酮糖通过抑制肠道糖吸收酶活性、激活肝脏葡萄糖激酶、调节脂代谢基因表达及改善肠道菌群结构等多重机制,展现出显著的血糖调控、体重管理和代谢改善功能。在食品工业中,其70%蔗糖甜度特性及独特的加工适应性使其成功应用于烘焙、饮料、乳制品等领域。尽管面临生产成本高和加工适配性等产业化挑战,但随着酶法合成技术的突破和临床证据的积累,阿洛酮糖在功能食品开发中展现出广阔前景。
Abstract:This study systematically reviewed the metabolic profile and application prospects of D-allulose as a functional sugar substitute. As a natural low-calorie sweetener,allulose exhibits significant benefits for blood glucose regulation,weight management and metabolic health. These effects are achieved by multiple mechanisms,inhibiting intestinal glucose absorption enzyme,activating hepatic glucokinase,regulating lipid metabolism gene expression and improving gut microbiota composition. In the food industry,Its sweetness,approximately 70% that of sucrose,and its unique processing adaptability have led to successful integration into a variety of products,such as baked goods,beverages,and dairy products. Despite the ongoing challenges – such as high production costs and processing constraints – advances in enzymatic synthesis,along with growing clinical evidence,suggest that D-allulose hold broad potential for the development of functional foods.
